Kumara & Tomato Pizza

Premade pizza bases – we like to use thin and crispy pizza bases

Mix of Kumara – 1 small gold, 1 orange and 1 Purple Dawn kumara, (around 600g).

 

Tomato Sauce

1 x 400 g can tomatoes, diced

1 tsp dried oregano

½ c loose packed fresh basil

1 tsp salt

good pinch of sugar

 

2 c mozzarella cheese

4 free range bacon rashers, diced

1 punnet cherry tomatoes, halved

100 g feta cheese, cubed

freshly ground black pepper

 

fresh herbs to garnish

extra virgin olive oil to drizzle

 

Kumara – Preheat oven to 180°C. Wash the kumara, bake whole in the oven for approx. ½ hour until tender. Let cool, peel then dice.

Tomato Sauce – Blend all ingredients together in a food processor.

To Complete – Preheat oven to 220°C. Place premade pizza bases on baking trays lined with baking paper. Ladle on a portion (not too much) of the tomato sauce, sprinkle on a handful of mozzarella, then the diced kumara, followed by the bacon, tomatoes, a little more mozzarella, feta, and a grind of pepper. Cook one at a time in the oven until the cheese has melted, and the base is coloured and crisp. Finish with a few fresh herbs and a drizzle of oil.

Makes 4 pizza – Serves 6 – 8
