2x500g Orange Kumara Beau Peeps, thawed slightly
2 red onions, peeled & each cut into 8 wedges
¼ cup walnuts, roughly chopped
3 tbsp olive oil
3 tbsp maple syrup
1 tbsp dried chili flakes
½ tsp salt
black pepper
½ cup feta cheese, crumbled
fresh parsley & extra chopped walnuts
to garnish
fresh red chili, finely diced – optional
Method:
Preheat oven to 200°C fan bake.
Place the Beau Peeps with the onions and walnuts into a large baking pan lined with baking paper. Drizzle with olive oil and maple syrup, and toss till it’s evenly coated. Sprinkle with the dried chilli flakes, salt and pepper.
Roast for 20 – 30 mins, or until the kumara is slightly caramelised and cooked through. Toss once at around 15 min mark.
Remove from the oven, and place the kumara mixture on a serving platter. Crumble over feta, extra walnuts and garnish with fresh parsley and chili, if using. Serve immediately.
Serves 6 as a side dish
