1. Grilling

When we think of summer, it brings back memories of those summer barbeques. Time catching up with family or tasty fresh lunches, popping with the colours of summers’ fruits and vegetables that are available.

In essence, BBQs are a key part of a kiwi summer and what’s a better way to enjoy New Zealand’s culinary vegetable, the kumara, than grilled on the bbq?

Simply cut the kumara in half, lengthways, brush with oil and place face down on the grill. Grill for 15 – 25mins, depending how hot the bbq is.

Remove from the bbq and sprinkle over some salt. Serve with a side of a lemon dressing.

2. Kumara Salad

This is a great lunch option to take out on a picnic or outing to the beach this summer!

Prepare it all in advance, seal in a container and you’re ready to go.

3. Kumara Bruschetta

We’re all for adding extra nutrients for your crew where you can, and this is a tasty way to do it. Kumara bruschetta or ‘toast’ is also a great snack to feed to your friends and family who may be gluten intolerant.

 

Simply slice fresh, medium-sized kumara into approx. 5mm thick slices. Place on a lined baking tray and brush with oil. Place in a preheated 180C oven for 10 – 15mins or until slightly golden. Serve up to your crew with your choice of toppings!
